
Lately I found myself on a mission to create different soups. Vic & I enjoy a good hearty soup. It's a great way to eat your veggies, low in cost, low in fat and feeds a lot of people. One recipe will serve as dinner and lunch for both us which is nice. Depending which recipe, I even have shared with Nana & Grandpa. I have been getting my soup recipes from
Gina's weigh watchers blog site. Don't be fooled into thinking that these soups lack flavor because they happen to be low fat. I assure you they do not. Some of our favorites include: cream of zucchini soup (which I have been making for years back when I joined weight watchers), pasta & bean soup (similar to the Olive Garden Pasta and Fagioli soup), and escarole & meatball soup (italian wedding soup). Guess what I'm having for lunch today??
These low fat soups are particularly appealing to me because they allow me to indulge my sweet tooth and have dessert without guilt!
