Walnut goat cheese cranberry salad

We at the Albonetty household enjoy eating salads especially in the spring and summer. It's so refreshing to munch on when it's hot and humid out. I wish I could took take credit for this recipe but I can't. Victor actually discovered it at Whole Foods supermarket. He was grabbing lunch during his lunch break at work and found this delightful salad ensemble. My husband is funny, he was so tickled with this salad that he would not tell me the ingredients when he was telling me he had a delicious salad. He insisted on surprising me the next time we were around a Whole Foods Supermarket...Which isn't very often considering we live so far away from them. Luckily for me, we happen to be around a supermarket this past weekend. We had the salad right then and there for dinner and I too loved it. Now it's one of my favorites. It couldn't be simpler.

Ingredients
  • dried cranberries
  • walnuts, toasted or not
  • goat cheese, sliced or crumbled
  • spring mix greens - I buy premixed out of convenience
Arrange salads on plates and add all the remaining ingredients. Drizzle balsamic vinaigrette. Enjoy!!

  1. this is like california style salad. my absolute fav salad from back home is a blue cheese walnut salad. which has; grilled chix, crumbled blue cheese, small diced tomatoes, bacon, dried cranberries, fresh strawberries, walnuts, & spring spinach salad with balsamic dressing. btw. it was great seeing you guys!!
