Jessica Seinfeld Cookbooks

It's week 4 of calorie counting for me and I am down 7.4 lbs, not too shabby I think! My clothes are fitting better and I'm beginning to feel a lot better about my body. I still have not exercised but I'm planning this weekend to add stomach crunches and other similar exercises that I can do at home while the tv is on. Spring officially sprung last Sunday however it certainly does not feel like it here. In fact, we got a light dusting of snow yesterday about 2 inches! Luckily it is all melted and gone but still not a pretty sight after the brutal winter we have had. Hopefully that will all change soon!


This week I have been putting my Nook e-reader to use. I bought a couple of cookbooks and an inspirational book to read. I am hoping to get in the kitchen this weekend and try some recipes from "Double Delicious" by Jessica Seinfeld. I have her first book, "Deceptively Delicious" and enjoyed making some her desserts such as her chocolate chip cookie using chick peas. Yep that is correct! It actually tastes like a nut in the cookie. I found this recipe tasted best on the day. The next day the chick peas lost their crunch. I also made her pumpkin donuts which were tasty and cute too. I love anything pumpkin! I recently discovered her website and blog which can all be found at http://www.doitdelicious.com/. Jessica's gimmick in both her cookbooks uses vegetable and fruit purees in all the recipes. In the recipes I have made, the purees were all undetectable which is the goal! Sneaking in nutrition while enjoying a good meal or treat. I'm planning on making pancakes with sweet potato puree this Sunday from her new cookbook. I'll let you all know how it turns out!
